CULINARY ARTS - 3 Units

Gr.12, 2 Semesters, Daily, 3 Hours, AM and PM Sections. A Career Education Consortium Center of Excellence, the new Culinary Arts program at Herndon (East) is a one-year program constituting the second year of the two-year ProStart commercial culinary arts curriculum. Major units of study include ServSafe certification; potatoes and grains; desserts and baked goods; meat, poultry and seafood; stocks, soups and sauces; the history of food sevice; the lodging industry, the art of service; marketing and the menu; purchasing and inventory control; standard accounting practices; tourism and the retail industry; and communicating with customers. Expectations: Students must supply and wear a "chef's" coat at all times when attending the culinary arts program. Students may occasionlly be required to work after regular school hours in order to participate in catered events. Dual credit/articulation: Successful students are eligible to earn up to seven hours of credit In the Johnson County Community College Culinary Arts program.

Class size: 20 maximum.

PREREQUISITE: MINIMUM 2.0 GPA & 90% ATTENDANCE RECORD. ALGEBRA WITH MINIMUM GRADE OF "C". Applicants must complete successfully the Year-One ProStart curriculum if it is available at their high school and pass the Year-One ProStart examination. Applicants must read and write at the 10th grade level. Applicants from high schools wihtout ProStart curriculum available must complete an advanced foods and nutrition class with a minimum GRADE OF "B" and have a written recommendation from their advanced foods teacher.

RECOMMENDED
: Students should take foods and nutrition, health and business and/or marketing classes prior to applying to this program.
